The Souk Calendar
Morocco's growing season is long and diverse. Citrus dominates winter. Berries arrive with spring. Summer brings melons, stone fruit, and the beloved karmous (figs). Autumn is the season of rommān (pomegranates) and tmar (dates) in the south.
Greenhouse vs. Natural
The Souss Valley exports tomatoes and peppers year-round from industrial greenhouses — most bound for European supermarkets. This chart shows natural outdoor seasons, when crops taste best and cost least at the local souk.
Khobiza — The Winter Staple
Wild mallow (khobiza) is the crop no tourist guide mentions but every Moroccan knows. Foraged from November to April, it appears in a thick, silky dish that feeds families through the cold months.
